Brisbane Airport enhances dining experience in Domestic Terminal with modern Australian flavours


Brisbane Airport is aiming to raise the bar on airport dining as part of its ongoing $5 billion Future BNE transformation. A new dining experience in the Domestic Terminal is bringing modern Australian flavours to travellers.

A new dining experience from a local hospitality heavyweight has set up shop at Brisbane Airport, bringing modern Australian flavours to the Domestic Terminal. Matt Jefferson, executive chef and owner of Gold Coast institution Social Eating House, has taken the helm at the Domestic Terminal’s The Independent for a six-month residency.

Jefferson is the latest chef to feature in the rotating series, elevating the airport experience for the thousands of passengers and visitors who pass through the airport each day. The curated menu will offer travellers a chance to enjoy bar bites and fresh takes on classics.

The Independent gives top Australian chefs and emerging local talent an opportunity to plate up their signature dishes and experiment with new flavours over a seasonal, short-term residency.

“Brisbane Airport is raising the bar on airport dining, investing in standout food & beverage experiences that passengers actually get excited about as part of our ongoing $5 billion Future BNE transformation,” said Scott Norris, Executive General Manager Commercial, Brisbane Airport. “The Independent delivers a refined and elevated dining experience where rotating guest chefs curate seasonal menus that celebrate fresh local produce. It’s a unique opportunity for passengers to enjoy restaurant-quality cuisine before they fly.”

Chef Matt Jefferson added: “I can’t wait to fire up the pans at The Independent at Brisbane Airport this summer. It’s a great opportunity to bring a taste of Queensland to travellers and showcase some creative new dishes that I’ve been working on.”

The restaurant is owned by SSP Australia & New Zealand, which operates 16 different sites at the Domestic Terminal. At the International Terminal, 13 new and refreshed dining outlets are on the way as part of the transformation of the terminal, delivering everything from local coffee heroes to global favourites.
